Vegan Bagel Bites - 20 Minutes or Less Weeknight dinners

I grew up in the 90's, therefore, I will never be able to get the Bagel Bites commercial jingle out of my head
Pizza in the morning,
Pizza in the evening,
Pizza at supper time!
When pizza's on a bagel,
You can eat pizza anytime!

It doesn't make much sense as an adult that can eat regular pizza anytime, but it was the height of marketing food products to children and normal logic didn't apply. They were telling kids to remind their parents that Bagel Bites could be a breakfast since bagels are a breakfast food. Presumably it worked because I remember asking for Bagel Bites at all hours of the day.
I have reached a more adult realization that a frozen and processed snack food is not a good thing to eat for every single meal. So for this week's quick and easy dinner recipe I decided to make a healthier and vegan version of Pizza Bites.
4 plain mini bagels - I just used the Kroger brand plain ones because they are both the perfect size and vegan.
Otamot Essential Tomato Sauce - This one is packed with nutrients and is made with ten different vegetables and no added sugars. Yet, it has a bit of natural sweetness from the sweet potato that almost makes me think of a frozen pizza snack. So this one was pretty perfect for it, but you could obviously use any pizza sauce.
Daiya Mozzarella Style Shreds - I've been told that this is the best vegan cheese for melting so I went with it, but if you know of a better one drop it in the comments for me.
1/4 of an onion
1 red pepper
1 tablespoon olive oil
Sliced baby bella mushrooms (I used a handful)
Chop the quarter onion and roughly half a red pepper. Saute with chopped mushrooms in olive oil on low until they start to soften. Once done place in a bowl for toppings. I do this because these will not need to cook for as long as a regular pizza and I don't like my toppings super crispy - but that's just my personal preference.
Cut the mini bagels in half and place all of the bagel halves evenly on a baking sheet.
Add roughly a tablespoon of sauce to each bagel half and spread it evenly.
Sprinkle on Daiya mozzarella style shreds evenly.
Add toppings on each bagel half as desired.
Place in the oven for 8-10 minutes or until Daiya mozzarella style shreds are evenly melted.
Now you can have vegan mini pizza bagels anytime!
